Unfortunately, none of ConTeXt’s table modes has columns that “take the rest width”, but [[Tabulate]]’s <tt>p</tt> columns without defined width come close; with [[TABLE]]s, you can set <tt>option=stretch</tt> to spread the remaining space over all columns.
